Barbacoa-style lamb is quickly becoming a “go-to taco filling,” with its moist, fall-apart tenderness and authentic flavors. Traditional Barbacoa is made with meat from lamb, goat, or beef and it is slow-cooked over an open fire, or more traditionally, in a ground pit, which is a hole dug in the ground.
